Five inside: Knudsen for Digestive Health lowfat cottage cheese

Unlike common curds, this cottage cheese, (branded as Breakstone's in some regions) contains prebiotic fiber, a nondigestible, natural food ingredient that promotes healthy growth of the live & active cultures already in the digestive system (probiotics). Prebiotics act as a food source for good bacteria and help them thrive. In doing so, prebiotics help to balance the good bacteria in the gut and can improve digestive health. Here's a look at what's inside:

1. Cultured Pasteurized Grade A Skim Milk


 

The Grade A rating designates a level of safety – not quality. According to USDA standards, Grade-A pasteurized milk must come from healthy cows and be produced, pasteurized and handled under strict sanitary controls, which are enforced by state and local milk sanitation officials. In pasteurizing, milk is heated briefly to eliminate harmful bacteria before it is rapidly chilled. Homogenized milk has been processed to reduce the size of the milkfat globules so the cream does not separate and the product stays uniform throughout.

2. Whey

The liquid that remains once milk has been curdled and strained, whey is a by-product of making cheese. Researchers at Lund University in Sweden found that it can stimulate insulin release and could help reduce blood pressure spike in patients with type-2 diabetes.

3. Inulin

Inulin is a naturally occurring group of simple sugars produced by plants that is resistant to digestion in the upper gastrointestinal tract, which enables it to reach the large intestine intact. This allows for increased calcium absorption and better digestion by feeding the good bacteria in the stomach. Its slightly sweet taste allows it to be substituted for sugar.

4. Modified Food Starch

A thickening agent that has been physically or chemically altered to allow for greater resistance to heat, acid and freezing, as well as to shorten the thickening time. The starch could be from corn, wheat, potato, rice or tapioca.

5. Guar Gum

Also a food thickener, this natural extract of the guar plant was once commonly used in over-the-counter diet pills to help create a feeling of fullness when it swelled in the stomach. Once the FDA discovered that the mass of swollen guar gum could cause dangerous intestinal blockage, it was deemed unsafe in large amounts. –Matthew M. F. Miller
