Chicken pot roast
Ingredients
1 whole chicken
8-10 new potatoes
4-6 large carrots, each cut into 3-4 pieces
2 onions, peeled & quartered
1 can chicken broth
Salt & pepper
Place chicken, potatoes, carrots, onion and broth in large cast iron Dutch oven with lid. Add 1 can water. Season heavily with salt and pepper. Cover and place on coals in fire. Top with coals, replacing with hot ones as needed. Cook 2-3 hours. Serves 4-6.
Campfire Chicken & Veggies
Ingredients
2-3 chicken breasts
1 yellow squash, sliced
1 zucchini, sliced
1 onion, peeled & quartered
1 bunch green onions, chopped
1 red bell pepper, seeded & chopped
1 can chicken broth
Salt & pepper
Place chicken, vegetables and broth in small cast iron Dutch oven with lid. Add one can water. Season heavily with salt and pepper. Cover and place on coals in fire. Top with coals, replacing with hot ones as needed. Cook 2-3 hours. Serves 2-4.
