Been to Bellmead’s Collin Street Bakery yet?

Even if you haven’t, you can do the next best thing and view the latest “In Like Quinn” video, which takes Trib staffer Erin Quinn to the new bakery on Interstate 35.

I predict an uptick in business for the bakery after you watch the video.

I do not get what all the hype is about!!!! That place is terrible!! I was so excited to see a huge “bakery” being built then when it opened I was so disappointed!! Well if you like fruit cake and pecan pie I guess you are happy but they offer little else. That beautiful huge building is worthless if you ask me!! I give it a year then it will be up for sale.

Trust me, this place is NOT all “that”. It is overpriced, the food is “wimpy”, and the hype about this place is a joke. We were expecting a real bakery and a real place to go sit and have a lunch, but the portions are very small and overpriced. Don’t like it, and probably won’t go back.

The chicken salad sandwich and iced tea was absolutely wonderful! Best I have had since O&H shut down. Not exactly the same, but very, very GOOD! Go there!

We were all very excited when news that a new bakery was in town. The building is beautiful. We all loaded up one day and much to our surprise, we left the Bakery with broken hearts. There was nothing but cookies & fruit cake. Truthfully the cookies were not even good. Where are all the pastries?? Not worth the drive for sure!!

I have to second all the remarks about the building being beautiful, but the selection and high price being very disappointing. I got a sandwich (just like you’d make at home), small bag of chips, and a soda and it cost me nearly $10. The sandwich was very good, but not worth the money. Nothing other than sandwiches and maybe a few salads from which to select. No pastries at all and the “traffic flow” is far from streamlined. When you walk into the front door, you’re pretty much lost as to where to go. It’s only after looking around for a few minutes that you realize the counters at which you order lunch are WAY in the back. They should put a sign up at least.

I second that Are you kiding me. I give them a year. Too little too late if you ask me. I think people do a terrible job of researching the Waco market when it comes to new businesses. It seems that Waco gets a lot of stores and businesses that Waco doesn’t need. Erin Quinn, I don’t you helped this business at all. Not a good interview/ hype session.

My wife and I were excited to hear that Collin Street Bakery was arriving in this area. We do not like fruitcake but wanted the “bakery” experience. Then we visited the beautiful building. That is all we can say positive about our visit. We could choose from four different varieties of cookies, three varieties of fruitcake or visit the sandwich bar. There is no “bakery” experience here. I purchased two cookies of each variety. I ate one of each and tossed the others. Too pricey for poor quality and limited choices. I will not recommend this place (not a bakery) to anyone and I will never visit here again. Sorry, but I was extremely disappointed.

I don’t know what day of the week all of you went, but when I went in there, they had all sorts of pies and cookies and pasteries, lots of different varieties. And if you are too lazy to pick your head up and see the big screen TVs in the back with the menu on them, well I guess you shouldn’t be in an eating establishment anyway. You people are zombies, you think that you should walk in a food place and immediately become a zombie in the line to order your triple cheeseburgers with extra large fries and 50 oz coke, God forbid you have to actually WALK to the back of the store to order something a little healthier from the sandwich shop! The store is full of different breads and things you can buy also. I give them an A, it is a good place to go have a nice light lunch in a larger than normal place so you don’t have to be crowded in my 400 chairs/tables around you. They definitely got it right on the size.

I for one was pleasantly surprised when my son talked me into going to the bakery. I expected mostly their signature fruit cakes, but they had all kinds of breads, cookies, etc. not to mention the lunch counter at the back. The cookie variety was wonderful, and the ones we purchased were delicious, as was the pecan bread. And not any more expensive than similar quality - we left with a loaf of bread and box of cookies for under $10.

Typical WACO WHINERS! Reading all the negative comments from ALL THE Whiners makes me want to puke! Maybe all you whiners will get lucky and they will open a GERITOL Shop, that will be more to your liking!

I went one morning a little while after they opened. I was the only one trying to buy anything at the time, but when I left there was a pretty good line. There was hardly anything on the coolers, so I don’t know if it was because they weren’t ready to open or had already sold out of everything.

The girl helping me wasn’t sure how to use the machine to make a hot chocolate, and asked another girl to help her. She shot her a dirty look and made a few rude comments, before snapping at her to finish with me while she made them. She apparently didn’t know how to make them either. Long story short, it took me 30 mins to get 2 hot chocolates and a dozen muffins.

The muffins were yummy, but the hot chocolate was barely luke warm. I will probably go back. I guess everyone needs a learning curve, but I will wait a while before I go back.

Goes to show how different people have different taste.. Some people love On the Border, personally I don’t but then to each his own. People when business first start up its takes time to get the routine in motion. Also I’m sure that they have a better selection during the weekend, then they would during the week. So give the place a break!!! Oh by the way I’m not picking On the Border..

Some of you guys are missing one of the points, here: Collin Street Bakery already has established clientel.

This isn’t some local bakery. This bakery has a worldwide brand; thus, people will trek to it the same way they trek to the Corsicana location from Dallas and Houston.

Compare it to the Czech Stop. The Czech Stop has a regional draw even though its gas is usually higher, the store is not the largest or cleanest around, and the kolaches are serviceable. (some aren’t too bad, but nothing can beat grandma’s fresh batch.) Nevertheless, people HAVE to stop there.

Maybe CSB needs some gas pumps, but it has an established brand and may be able to ride out a poor economy on the value of its own brand.

Give ‘em a chance to get going and then try again - they haven’t even had an official grand opening yet. If you like ooey-gooey pastries, get there EARLY and try the Apricot or Chocolate danishes (croissants really). I had one right out of the oven and it was YUMMMMMMMY! Also, the praline lace cookies are to die for. Seriously.

Typical wealthy establishment where the rich make money and hire cheap labor. It’s the waco way! That’s the problem with Waco. They bring out of towners to run these businesses and hire local cheap labor. No wonder these Baylor kids don’t stay here when they graduate, because Waco is divided Rich/Poor….no middle!

I do not give this place a year before it goes under. I have been there twice and both times the service and the food have been terrible. If you really want good bakery items go to HEB or head to West. This place is toast.

It is very evident that not many of the posters have gone to the bakery in Corsicana. It has the same stuff and is always packed. It has been that way for years.

How come Waco Tribune………you let everyone comment on the bakery and there is no space to comment about the apartment contractors filing lien against the owners of the new apartment complex in downtown Waco? OOH-WE… HarleyJ!!!!! Looks like a lot of dust kicking up in downtown Waco and it’s not the 600,000-800,000 cows going right through downtown Waco over the Suspension Bridge. Maybe the citizens will pay more attention and ask questions of their city Council now. By the way, Collin Street Bakery is a nice place and has different things out at different times of the day:)

Someone brought a box of chocolate chip cookies from Collin Street to work Wednesday. They were about like vending machine cookies. I want the pecan rolls like the one in Corsicana sells.

Oh My God Oh My God Oh My God Oh My God!!! This new Collin Street Bakery was so worth the drive from Tucson, AZ! We saw this news story online and just could not wait! The fine people of Waco, TX, are so so lucky to have such an amazing establishment near by! Don’t mind the first set of comments that you read on this blog… those people obviously went too soon (too close to opening). Any good critic knows that you never go near the opening of anything; that is when they are just getting their feet wet! Dave Baca really knows what he is doing with running a fine establishment! Excellent job Collin Street! Let us know when you are going to open the same quality store in Tucson, AZ!
