Z Bar and Grill replaces Basaberu
By Mike Copeland Tribune-Herald business editor
It started out as Basaberu, but the restaurant at 723 S. Sixth St. has a new name, a new owner and a veteran consultant to make sure the food is prepared just right and the staff is properly trained.
The guy in charge, so to speak, is Gabriel Rodriguez. His family owns the Ninfa’s Mexican restaurant in downtown Waco, and he opened a steakhouse on Hewitt Drive called 135 Prime.
Now he’s on to a new challenge — Z Bar and Grill.
He says the menu is a combination of down-home and eclectic. He sells “a little bit of country food,” such as chicken-fried steak, meat loaf and burgers.
But he spices things up with items such as lemon pepper chicken, wings and catfish po-boy sandwiches.
When he’s making a Z Stuffer, he cleans out a fresh jalapeno, stuffs it with cream cheese, and wraps it in breakfast sausage and a bread-crumb batter before baking it.
Other specialties include a 16-ounce rib-eye with a salad and two sides for $17.99. There are sandwiches, a jalapeno burger and a heart-attack burger.
The latter includes a half-pound of meat, American cheese, a fried egg, fried onion rings, sausage gravy and bacon. It comes with cheese fries, with sausage gravy poured over the top.
Z Bar and Grill is open for lunch and dinner from Monday to Friday. The establishment offers breakfast Saturdays and Sundays, when it serves 18-inch pancakes and breakfast burritos and sandwiches.
Owner Phyllis Herring is about two weeks away from getting a liquor license. Herring is the mother of Carol Weaver, the longtime owner of a local mattress store.
