Healthy options? Spring rolls, which are rice noodles wrapped in rice paper, with fresh vegetables and choice of chicken or tofu.

Restaurant’s origins: Owner Paul Tran opened Pho on Feb. 18, after working many years for Pizza Hut franchises in sales and catering. Tran has lived in Waco for 19 years. Pho is a family-run restaurant, Paul’s father does the cooking. Paul runs the floor and his mother helps where needed.
